Tortilla Soup Mix Ingredients:

Dehydrated black beans, corn, red and green pepper, onion, garlic, epazote and chili spices. No added salt, preservatives or MSG.

Allergen Information: Certified Gluten-Free

Recipe Additions:

  • 6 cups chicken broth
  • 1 cup water
  • 2 cups shredded precooked chicken breast
  • 12 ounces salsa
    Recommended Garnish: 4 ounces tortilla chips, crumbled (a thicker chip works best) or tortilla strips

Tortilla Soup Recipe Directions:

  1. In a 4 quart pot bring broth and water to a boil, add contents of tortilla soup mix, chicken and salsa.
  2. Simmer, covered, for 25 minutes.
  3. Serve as is, or crumble chips into bowls, pour hot soup on top and serve.

Inventive Soup Recipe Variations:

  1. This tortilla soup is so good it may call for a party. Optional garnishes of chopped fresh cilantro, diced fresh avocado or thin slices of lime make a festive presentation!
  2. Shrimp can be used as an addition instead of chicken for a delicious shrimp tortilla soup!
  3. Use 1 pound peeled and deveined or frozen baby shrimp. Add for last five minutes of cooking time.

Tortilla Soup Vegetarian Recipe #1:

  1. Leave out the chicken and substitute vegetable broth.
  2. Add the salsa and cook 20 minutes.
  3. Add 2 cups baby shrimp for the five minutes more of of cooking time.
  4. Serve with tortilla chips.

Tortilla Soup Vegetarian Recipe #2:

  1. Again leave out the chicken and substitute vegetable broth.
  2. Add the salsa and cook 20 minutes.
  3. Slice 2 ripe avocados and place slices in the bottom of each bowl.
  4. Ladle in the soup, top with chips and a squeeze of fresh lime juice
