Serve this authentic, Italian wedding soup garnished with Parmesan cheese and crusty bread for a fine meal for two.

Italian Wedding Soup Mix Ingredients:

Acini de pepe pasta, onion, carrots, whole grain bread crumbs, celery, parsley, 5 pepper blend, garlic, rosemary, oregano, nutmeg and bay leaf. No added salt, preservatives or MSG.

1 tablespoon olive oil
1 small to medium onion, chopped
1/2 pound turkey Italian sausage, about 3 links
1 egg white, beaten
4 cups chicken broth
1 small head escarole, chopped, about 2-3 cups (may substitute 1 box frozen spinach)
Optional: shredded Parmesan cheese

Italian Wedding Soup Recipe Directions:

To Prepare the Meatballs:
Push the turkey sausage out of the casings, discard casings. Use two knives and chop/slash the whole grain breadcrumb/herb mixture and egg white into the ground turkey. Form small meatballs by hand, about 30-35. Set aside in refrigerator until ready to add to the soup.

Cooking Tip: Meatballs can be messy, but we have a clever tip for all cooks: Place a bowl of cold water beside you as you form the meatballs and dip your fingers in the bowl after every second or third meatball and you'll find the meat does not stick to your finger tips. This is one really good soup, and worth the trouble!

To Prepare the Soup:
In a 4-quart pot, sauté onion in oil for 2-3 minutes. Stir in contents of the larger soup seasoning packet, about 30 seconds. Add broth and bring to a boil. Add meatballs and simmer 20 minutes covered. Bring heat up to a boil and add tiny pasta and escarole. Reduce heat to a simmer, cover and cook 10-15 minutes.

Inventive Recipe Variations:

Expand this Italian Wedding soup as the family grows. Simply add 1/4 to 1/2 pound more ground turkey and another egg white to multiply the meatballs. Add 2-3 cups more broth and serve the children as well as the relative this fine Italian supper.
