This soup supplies over 31 grams of whole grain per serving and meets the criteria as an “Excellent Source” of whole grains.
Wheat Berry Chili Ingredients:
Wheat berries, red and green peppers, celery, onion, garlic, Sanataka chili pepper, spices and herbs. No added salt, preservatives or MSG.

Recipe Additions:
1 pound ground turkey
1 14-oz can beef or vegetable broth
1 28-oz can tomato pieces
Optional 1/2 cup red wine
Wheat Berry Chili Recipe Directions:
Soak wheat berries in cold water overnight, then bring to a simmer in a pot of fresh water for 50 minutes. In a separate pot, sauté ground turkey in 2 tablespoons oil. Stir in the contents of seasoning packet and, if desired, add the red Santaka chili pepper for more heat. Add broth, drained wheat berries and tomatoes, and simmer 1 hour. If desired, add optional wine and serve with grated cheddar cheese or sour cream on top, and round up the campers for this hearty whole grain chili!

Vegetarian Wheat Berry Chili Recipe:
1 large baby eggplant, diced not peeled.
1 large sweet onion, chopped.
Cut up one large eggplant into 1/2 inch cubes, lightly salt and let stand fifteen minutes. Heat 4 tablespoons oil in 4 quart pot, add eggplant and one large, sweet onion chopped, tossing and turning to brown lightly. Add broth, wheat berries and tomatoes and simmer 1 hour. Serve with grated cheese, if desired.
Crock Pot/Slow Cooker Recipe Directions:
Recommended crock pot: 3-4 quart
Preparing the wheat berries the night before:
- Place wheat berries in large bowl with 2 quarts fresh water, place in refrigerator overnight.
Assembling the soup in the morning:(or the night before)
- In large skillet saute ground turkey in oil. Stir in contents of seasoning packet.
- Transfer the turkey mixture to bowl of slow cooker along with broth, tomatoes and red Santaka chili pepper.
(May cover and refrigerate over night.)
- Drain the wheat berries and add to crock pot. Stir and cook on LOW for 8 hours.
- Serve with grated cheddar cheese or sour cream on top.
