Our broccoli cheddar soup mix makes a lovely appetizer or luncheon soup with a hint of curry and the addition of shredded cheddar cheese.

Serves: 4-5
Cooking Time: 45 minutes

Broccoli Cheddar Soup Mix Ingredients:

Broccoli, onion, carrots, yellow peppers, Himalayan red rice, white rice, curry and spices. No added salt, preservatives or MSG.

Recipe Additions:

5 cups chicken broth
1 cup cream (heavy, half & half or milk)
1 cup shredded, cheddar cheese (4 ounces)

Broccoli Cheddar Recipe Directions:

In a 4 quart pot bring broth to a boil. Add broccoli cheddar soup mix, lower heat and cover, simmer 30 minutes. Add cream and continue cooking on low 5 minutes more. Stir in cheese, allow to stand 5 minutes and serve.

Cold Broccoli Cheddar Soup Recipe:

For a summertime soup, this broccoli cheddar soup can be served chilled. Prepare as above, but simmer for 45 to 60 minutes and omit the cheese. Cool completely on stovetop. Chill in refrigerator 2 hours or overnight. For an elegant presentation, puree soup using a food processor, food mill or hand blender. Peel, remove seeds and dice one large cucumber. Sprinkle a spoonful to each bowl before serving.
