6 cups chicken broth
1 whole, boneless chicken breast, raw or precooked (2 halves)
Optional: 1 cup white wine or 1/2 cup cream
In a 2 or 3 quart saucepan bring broth to a boil. Add mushroom wild rice soup mix ingredients. Lower heat and simmer, covered, 20 minutes. Add chicken and simmer 20 minutes longer. Add wine or cream if desired. Let stand five minutes and serve.
We call this variation the Hunter’s Bounty because wild rice and mushrooms are natural accompaniments to any fowl substitute such as pheasant, quail or duck instead of chicken for a sophisticated soup supper.
