This tomato rice soup mix makes a classic, home style soup with the additions of chicken broth and canned tomatoes.

Rice, dried tomatoes, yellow peppers, carrots, onions, leeks, shallots, Italian parsley and herbs. No added salt, preservatives or MSG.

6 cups chicken broth
1 28-ounce can crushed tomatoes in puree
2 tablespoons brown sugar
Bring broth to a boil in a 3 or 4 quart, non-aluminum pot. Add tomato rice soup mix to broth. Add tomatoes and brown sugar and bring to a boil. Reduce heat and simmer slowly, covered, for 20 minutes.
Add 3/4 pound fresh shrimp, shelled and deveined. Simmer 2-3 minutes until opaque. Garnish with 1/2 cup crumbled feta, blue or parmesan cheese. 2. For a cream of tomato soup, gently heat 2 cups cream (or buttermilk for a more piquant taste) and add to tomato base before serving. 3. Or, for a spicier soup add 1/4 teaspoon cayenne pepper.
This tomato basil soup mix may be served chilled for an elegant summertime soup. Prepare according to recipe instructions. Simmer soup for 30 minutes. Cool completely on stovetop. Refrigerate for 2 hours or overnight. Stir in cream before serving. Garnish with fresh basil and enjoy!
