This easy to prepare corn chowder mix is a quickie version of our famous Illinois Prairie Corn Chowder but with a hint of heat. Add broth and cream, or go gourmet with the addition of fresh seafood.

Corn, rice, potato, red peppers, onion, chives, cayenne pepper and dill. No added salt, preservatives or MSG.

5 cups chicken (or vegetable) broth
1 cup half and half cream
Optional: 2 cups scallops, peeled shrimp or cooked cut-up chicken
Bring broth to a boil in a 2 or 3 quart saucepan and add corn chowder soup mix ingredients. Reduce heat and simmer, covered, for 15 minutes. Add cream, continue cooking on low for 10 minutes with seafood, if desired. Turn off heat, let stand 5 minutes and serve.
Add one cup each chopped fresh broccoli and cauliflower to the mix and serve with grated cheese on top for a festive holiday corn chowder or to delight vegetarians!
Simmer soup according to above cooking instructions for 30 minutes. Cool completely on stovetop. Refrigerate for 2 hours or overnight. For an elegant presentation, soup may be pureed in a food processor, food mill, or with a hand held blender. Stir in cream. Garnish with fresh dill and enjoy!
