Montana Creekside Classic Chili Mix

Three chili peppers, ancho, cayenne and a whole japones pepper, give sweet heat and smokey richness to this meaty Western-style chili with dehydrated pinto beans for a 30-minute meal.  (May also prepare this chili with bison meat!)

Classic Chili Mix Ingredients:

Dehydrated pinto beans, onion, red and green bell pepper, cumin, paprika, ancho chiles, garlic, cayenne, whole japones pepper and spices.

  • 1 tablespoon oil
  • 1 1/2 pounds ground chuck*
  • 12 ounces beef broth
  • 1 14 ounce can petite diced tomatoes
  • 2 tablespoons red wine vinegar
  • 2 teaspoons sugar
  • Optional: 1/2 teaspoon each of salt and freshly ground black pepper

*May reduce ground chuck to one pound, if preferred

Recipe Directions:

  1. Heat oil in a 4 quart pot.
  2. Add ground chuck and brown thoroughly over medium to medium-high heat.
  3. Stir in contents of Montana Creekside Classic Chili Mix for 30 seconds.
  4. Add in tomatoes, broth, vinegar and sugar. Bring to a simmer.
  5. Cover and simmer on low for 30 minutes.
  6. Remove the whole japones pepper.
  7. Serve with optional toppings of sour cream and shredded cheese or sliced avocado with cornbread on the side.

New Nutrition Tips:

  • To boost vegetables, add 2 cups chopped, mixed red and green peppers and 1 cup chopped, fresh or frozen carrots in final ten minutes of cooking time.
  • To go Vegetarian, dice up one zucchini, one red pepper, one onion, and 8 ounces of mushrooms to replace the ground beef.
  • To give a Mediterranean twist, top each serving with 1 tablespoon unsalted cashews.
  • To cut saturated fat, prepare with 1 pound extra lean ground beef, bison, turkey, or go Vegetarian.
  • To cut sodium, prepare with no salt added canned diced tomatoes or diced fresh tomatoes or, and prepare with low sodium broth. To cut sodium further, substitute water for half of the broth.

Vegetarian Chili Recipe


  • 2 tablespoons oil
  • 1 large yellow onion
  • 1 red bell pepper
  • 1 medium to large zucchini
  • 8 ounces fresh mushrooms
  • 2 cups vegetable broth
  • 1 14 ounce can petite diced tomatoes
  • 1 tablespoon red wine vinegar
  • 2 teaspoons brown sugar

Recipe Directions:

  1. In a 4 quart pot, sauté vegetables in oil for 10 minutes.
  2. Stir in contents of the Montana Creekside Classic Chili Mix, vegetable broth, tomatoes, red wine vinegar and brown sugar.
  3. Simmer covered for 30 minutes.
  4. Remove the whole japones pepper and serve.
