Trenette Col Pesto is a beautiful Italian side dish for summer or any season with the magic of pesto.
Ingredients:
2 lbs. Baby New Red Potatoes
8 oz. Penne Pasta
18 oz. Fresh Green Beans
1 Jar Campagne Fresh Basil Pesto Sauce
Trenette Col Pesto Recipe Directions:
Boil potatoes 18 to 20 minutes in salted water. Drain and cool enough to handle but still warm. Toss with 1/2 jar of pesto. In a separate pot, cook pasta in boiling salted water according to directions of package. Drop in the green beans for 3-4 minutes with the pasta and drain all together. Toss with balance of pesto. Mix all ingredients together and serve or place in oven-proof casserole dish. Keep at room temperature until ready to reheat for 20 minutes at 300 degrees. Stir again and serve.
