Pumpkin Soup Appetizer
Bring 4 cups chicken broth to a simmer and add one 28-ounce can of pumpkin puree along with our Pumpkin Soup Spice Mix. Simmer slowly for 20 minutes, add 1 or 2 heavy cream, keep on low heat for ten minutes and pass in small coffee cups on a tray to start the party.
BLT Dip
Use our new Pesto Tomato Dip Mix blended with one cup each: sour cream and mayonnaise. Add 1/2 cup diced bacon or bacon bits and 1/2 cup diced tomato. Serve with crackers or toast points, or red and green peppers sliced.
Christmas 7-Layer Bean Dip
Use a nine-inch round glass pie pan and spread the following ingredients in layers. Serve with a favorite tortilla chip.
1 Can Refried Beans
2 Cups Sour cream mixed with 1 packet Chipotle Dip Mix
1 Cup each of chopped onion, tomato, shredded lettuce mixed with cilantro, and shredded cheddar cheese
1/2 Cup chopped black olives
Roasted Corn Polenta
This is the world’s greatest side dish for any meat entrée. Serve with grilled steak, pulled pork, barbecued chicken, roast lamb or sautéed Portobello mushrooms.
It is best made early in the day or a day ahead, then baked before serving for easy and delicious entertaining. (Serves about 10.)
Sauce for Beef Tenderloin
Mix one cup sour cream with 1/2 cup horseradish. Add 1 Tablespoon of Chipotle Dip Mix or Green Onion Dip Mix. Also delicious on baked potatoes.
