Turkey Sausage and Vegetable Stew Recipe

A satisfying one pot medley in any season!

Ingredients:

  • 2 tablespoons olive oil
  • 20 ounces Italian seasoned turkey sausage
  • 1 medium large zucchini, cut up
  • 1 medium large sweet onion, chopped
  • 3 carrots, peeled and cut up
  • 1/2 pound baby new potatoes (red or white), cut up
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth

Recipe Directions:

  1. In 4 to 5 quart saucepan or casserole crumble and sauté the sausage in oil.
  2. Add all veges and broth.  Cover and cook on medium low for about 40 minutes.
  3. Serve in flat bowls with crusty bread.
  4. Option: Add 2 cups chicken broth, and for last ten minutes add 1/2  cup orzo pasta.

Updated Slow Cooker Soup Recipes

Minnesota Heartland 11-Bean Soup

Slow Cooker Recipe Directions:

Recommended slow cooker: 6-7 quart size

For this all day cooker, we suggest cutting up all the vegetables
and meats the night before or in the morning and refrigerate them
in large plastic container so they are ready to add to the soup
at the end of the day.

  • Rinse, drain and pick over beans.
  • Place beans into bowl of slow cooker.
  • Add the bouquet garni, ham hock, and 12 cups water. (Leave out the salt.)
  • Cover and cook on HIGH 6-8 hours.
  • Add tomatoes, onion, green pepper, garlic, diced sausage and cut up chicken. Stir well.
  • Cover and cook on HIGH 1 1/2 to 2 more hours, or transfer to the stove to cook more quickly.
  • Serve this thick and hearty soup with crusty bread and enjoy.

Slow Cooker Recipe Directions:

Recommended slow cooker: 6-7 quart size

  • In large skillet brown meat and onion a butter. Drain and transfer to bowl of slow cooker.
  • Add contents of soup mix and broth. Stir well.
  • Cover and cook on HIGH for 6-8 hours.
  • Stir in sherry, mushrooms, turnips.
  • Cook 1 to 2 hours longer covered on high, and serve.

New Wyoming Fireside Beef Goulash

A quickie version of hearty, peppery goulash prepared with ground beef, this new Homemade in Minutes soup makes a rustic meal in about 45 minutes. Gluten-Free

Ingredients:

Green lentils, potato, red and green bell pepper, carrot, onion, leek, paprika, carroway seed, marjoram and thyme. No added salt, preservatives or MSG.

Additions:

  • 1 pound ground round
  • 1 tablespoon oil
  • 4 cups beef broth
  • 1 10-ounce can tomatoes with green chilies
  • 1 tablespoon worcestershire sauce
  • Optional: a dollop of sour cream on each serving

Directions:

  1. In a 4 quart pot heat oil over medium high heat.
  2. Crumble and brown ground beef.
  3. Add soup mix and stir for 1 minute.
  4. Add broth, bring to a simmer and cover for 35 minutes.
  5. Stir in tomatoes and Worcestershire, cover and continue to simmer for 15 minutes.
  6. Serve in bowls with sour cream on top.

Serves 4 to 5. Freezes well if prepared ahead.

Variations:

Option 1: Serve on top of cooked wide egg noodles for a classic eastern European dish.

Option 2: For a soupier version that will serve more people, add 1 bottle beer and serve with crusty whole grain bread.

New Colorado Campfire Chicken Stew

New for 2010 this soup is as thick and rich as chicken pot pie with carrots, peas, potatoes and white beans, and can be prepared for gluten free dining. Great for campers too!  Gluten-Free

Ingredients:

Dehydrated white beans, potato, onion, carrot, peas, celery, yellow pepper, thyme and sage. No added salt, preservatives or MSG.

Additions:

  • 4 tablespoons butter
  • 1 cup onion, chopped
  • 1/4 cup flour or use cornstarch for gluten free
  • 6 cups chicken broth
  • 2-3 cups cooked chicken, cut up
  • Freshly ground pepper

Biscuits for Dumplings (Optional)

For chicken and dumplings add biscuits at same time as the chicken to the top of the stew and simmer covered, spooning soup over the top of the dumplings occasionally.

Campers!

For easy campfire cooking just simmer broth with the soup mix and canned chicken for a hearty meal with biscuits.

Directions:

  1. In a four quart pot melt butter and saute’ onion 5 minutes.
  2. Add flour or cornstarch, stir continuously for 30 seconds to form paste.
  3. Stir in broth, raise heat, and bring to a simmer. Stir until thickens.
  4. Add contents of Colorado Campfire Chicken Stew mix and chicken.
  5. Bring to a simmer again, cover and cook 30 minutes.
  6. Serve this thick-as-pot pie soup with biscuits on the side!

Soup will thicken if made ahead, may want to add 1 or 2 cups more broth when serving.

New Little Italy Wedding Soup

Our International Collection top seller, this Hearty Meal Soup recipe is adapted for families. Tiny meatballs made with our whole grains seasoning and pastini make this favorite Italian soup meal a treat for weddings or everyday.

Ingredients:

Acini de pasta, whole grain bread crumbs, onion, carrot, celery, parsley, 5 pepper blend, oregano, nutmeg and bay leaf. No added salt, preservatives or MSG.

Additions:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped, optional
  • 1 pound turkey Italian sausage, about 4-5 links
  • 2 egg whites, or 1 egg, beaten
  • 10 cups chicken broth
  • 1 head escarole, chopped, about 4 cups (may substitute 1 box frozen spinach)
  • Shredded parmesan cheese, optional

Directions:

Preparing the meatballs:

  1. Push the turkey sausage out of the casings, discard casings.
  2. Use two knives and chop the whole grain breadcrumb/herb mixture and egg into the ground turkey.
  3. Form small meatballs by hand, about 60. Set aside in refrigerator, or freezer, until ready to add the soup.
  4. To form meatballs easily, keep a bowl of cold water nearby and dip fingers between rolling meatballs.

Preparing the soup:

  1. In a 6-8 quart pot, saute’ onion in oil for 3-5 minutes or just stir in Little Italy Wedding Soup larger soup vegetable seasoning packet in oil for about 30 seconds.
  2. Add broth and bring to boil.
  3. Add meatballs and simmer 20 minutes covered, Bring soup back to boil and add the tiny pasta, and escarole.
  4. Bring heat back to a simmer, cover and cook 10-15 minutes.
  5. Serve with Parmesan cheese and crusty bread for a fine family dinner.
